Tanba Sasayama Ikkyuan
A renowned juwari (100% buckwheat) soba restaurant in the historic castle town of Tanba Sasayama. Freshly stone-ground, rolled, and boiled to order — the three freshness pledges produce intensely fragrant noodles. Housed in a beautifully renovated old farmhouse with irori hearth and sunken kotatsu seating. Wild boar hot pot (botan nabe) available in winter. Even on weekdays expect a wait of 7-8 groups.
Reviews praise: 'Amazing aroma', 'Worth a 2-hour wait', 'This quality at this price is unbelievable', 'Perfect when eating at the irori hearth seat'. Heavy concentration of praise for soba quality. Many returning customer comments.
