Chukasoba Yamakyo
Founded 1999. Opened by an owner who trained at Shunyoken, the prestigious origin of 'brown broth' Tokushima ramen. The classic style – rich sweet-savory broth topped with pork belly and raw egg – is called 'This is Tokushima Ramen.' Its limited hours (5 days a week, 6 hours a day) create loyal regulars who return 5 or 6 times.
