Chef Kazuhiko Koshikawa left the world of French cooking to open this shop in 2018, channelling techniques such as emulsification and frothing — and a strict no-chemical-seasoning ethos — into a bowl of shoyu ramen at 900 yen that repeat visitors from all over Tokyo call one of the city's finest.
The accolades are equally impressive: multiple Tabelog Ramen TOKYO Hyakumeiten selections, a Michelin Guide Tokyo Bib Gourmand, and the Tabelog Award Bronze in 2021.
