Sobakiri Anazawa
A one-house soba specialty restaurant founded in 2008, tucked in a residential neighborhood in Shizukacho, Koriyama. Selected as one of Tabelog's Soba EAST Top 100 Restaurants 2025, representing Fukushima's finest soba. The limited-quantity 'Premium Soba Kiri' is hand-rolled starting at 4 AM in a temperature- and humidity-controlled cedar room, using high-quality domestic buckwheat flour ground in-house with a stone mill. Regulars rave that the duck broth soba is 'tender and odor-free.' Regulars flock in the moment it opens at 11 AM, and on busy days it can sell out by early afternoon. Authentic handmade soba at 1,000–2,000 yen draws soba enthusiasts from all over Japan.
