Authentic hand-rolled soba made with in-house stone-ground flour. The owner personally visits production areas each year, changing domestic soba flour by region and season (Nagano, Fukui, etc.). The finely cut hand-rolled soba has an excellent aroma and smooth texture. Listed in the Michelin Guide.
