The batter rises to a tender, steamed finish while the soba below crisps in the oil, and the two layers lock together in a way that makes it clear why Hiroshima-style is its own category.
ふっくらと蒸し上がった生地の下でそばが香ばしく焼き上がり、二層が重なる瞬間の旨みは、広島のお好み焼きがなぜ別格なのかを体で教えてくれる。
Recognized with a Michelin Bib Gourmand, the pork-egg-soba combination is still just 1,150 yen; lines form before opening every morning, and sellouts before noon are not unusual.
