The originator of Morioka Jajamen noodles. This iconic shop was founded in 1953 as a street stall, inspired by zhajiangmian (Chinese fried sauce noodles) the founder ate in pre-war Manchuria. Flat noodles mixed with special meat miso, cucumber, and ginger — finish with 'chiitantan', an egg drop soup made from the leftover sauce. All three locations are directly managed, no franchise.
