池袋で70年続く製麺所「山口や」三代目・奥中宏美氏が夫とともに茗荷谷で開業した、無化調ラーメンの名店。
The clear chicken broth, crafted from Hinai jidori, Okukuji shamo, and Jitokko alongside Rausu kelp, carries a richness that seems impossible without chemical seasoning, all for 1,200 yen a bowl.
比内地鶏・奥久慈しゃも・地頭鶏の地鶏と羅臼昆布を合わせた清湯スープは、化学調味料を一切使わないとは信じがたいほどの深みと旨みを持ち、醤油ラーメン1,200円という価格が良心的すぎると唸る声は多い。
