Stone-Ground Handmade Soba Kaguraya
A handmade soba restaurant within the grounds of Oni no Yakata in Waga-cho, Kitakami. Kitakami-grown buckwheat is milled fresh every morning on in-house stone grinders, served in the traditional 'three fresh' style: freshly ground, freshly made, and freshly boiled. Three varieties offered: fine 100%, coarse 100%, and 28-style soba. The broth uses premium round-soybean soy sauce and authentic aged bonito. After TV coverage, over 20 people queued outside.
