Despite opening only in 2021, this Kyoto ramen shop rocketed to prominence almost overnight on the strength of a soup base drawing on three varieties of shellfish — scallop, clam and asari — in a style that is exceptionally rare even across the Kansai region.
Ramen enthusiasts have flocked to it in droves, with queues forming from the early morning despite a 7 a.m.
opening, and Saturday lunches routinely demanding a thirty-minute wait.
The fact that such a serious, deeply-layered shellfish broth can be had for 1,000 yen continues to astonish first-time visitors, and within just two years of opening the restaurant was consecutively selected to the Tabelog Ramen Top 100, an unusually swift vindication of its quality.
