A renowned hand-made soba shop using the celebrated pure waters of Gujo Hachiman. Motto: 'freshly milled, freshly kneaded, freshly boiled'. Uses buckwheat flour from Hida Sho-kawa and Gujo's famous water, made fresh every morning. Selected Tabelog Soba Hyakumeiten (East Japan) 5 consecutive years (2017/2018/2019/2024/2025). Serves only zaru soba, even in winter. Closes when sold out.
