Fresh soba flour is stone-ground in-house daily from temperature-controlled buckwheat husked the day before, using a blend of Hokkaido and Ibaraki varieties. The ni-hachi (80:20 buckwheat-to-flour) soba is praised for its 'overwhelmingly intense aroma unlike anything elsewhere.'
