The farm's purebred 'Highland Cochin' chickens, raised since 1967, are cooked in a 150-year-old farmhouse over an irori hearth and charcoal grill. Signature sukiyaki-style hot pot (hikizuri nabe) and net-grilled chicken draw out maximum umami from this original Nagoya Cochin ancestor.
