Takahashi Chukasoba
Founded in 1982, this is the originator of rich-style Tsugaru niboshi ramen, considered a sacred site by Hirosaki residents. The broth—sardine stock slowly simmered with pork bones, chicken carcass, and kelp—draws 'pilgrims' from outside the prefecture. Regulars use shorthand orders like 'Abuka-ta' (extra oil, firm noodles) and 'Koika-ta' (rich flavor, firm noodles). 3-minute walk from Naijoshi Station.
Reviews say 'This is the original Tsugaru niboshi flavor,' 'An absolute must-visit when in Hirosaki,' and 'Learning the regulars' code ordering system makes the experience twice as fun.'
