Sobaya Seibei
A hidden soba gem located in the highland Tamugi district of Tokamachi City. The owner grows and mills their own buckwheat from local contract farmers, binding with only funori (seaweed) for authentic hegi soba. The coarsely stone-ground flour brings rich aroma, and the tempura from wild maitake mushrooms grown in the beech forest behind the restaurant is exceptional. Locals unanimously recommend this as 'the real hegi soba experience.'
