Ishimame
A renowned hand-made soba restaurant nestled at the foot of Mount Yotei in Makkari Village. The name 'Ishimame' means 'grind the stone mill diligently.' Locally-grown Makkari soba flour is ground on hand-turned stone mills, then combined with fine-ground flour to match the day's humidity and kneaded with spring water from Mount Yotei.
