Founded in 1980. The originator of Ikeda-cho's signature 'salt-dashi soba.' The signature dashi, developed over 5 years using blended sea salt from Noto, pairs perfectly with handmade Echizen buckwheat noodles. Has devoted fans both inside and outside the prefecture. The traditional noren, stone mill, and solid-plank tables add nostalgic charm. In 2024, a second location 'Soba Dining Ippuku' opened in Fukui City.
