Koshu Hanten
Founded in 1934, the birthplace and shrine of Tsubame-Sanjo style backfat ramen. The first owner, Xu Changxing from Zhejiang Province, created this style for local metalworkers: extra-thick flat noodles, generous backfat, and dried sardine soy broth. Now famous nationwide. 70 seats, always full. Selected for Ramen East Hyakumei-ten 2025.
