After eight years at Menya Itto, the owner opened this shop in 2020 and turned the tsukemen world on its head with a style all his own.
「麺屋一燈」で8年間腕を磨いた店主が2020年に独立開業し、昆布水に浸した麺をそのままいただく独自スタイルでつけ麺の常識を一変させた。
The noodles arrive soaked in kombu water and are eaten as they are; the tare scales up with the noodle portion, keeping every bite in perfect balance to the last.
