Takato Soba Masuya
A handmade soba specialist near Takato Castle ruins using stone-ground flour from their own mill. Since opening, their style has been to mill four types of buckwheat using four electric mills and hand stone mills, then serve each freshly boiled. The unique 'Takato Soba' is eaten with dipping broth made from grilled miso dissolved in mackerel dashi - a Shinshu-origin way of eating. Featured on Matsuko Deluxe's TV show.
