Shinano-ya
Founded in 1948, this is the originator of 'koro udon' (cold udon) in Tajimi. Only open three days a week, selling out quickly. The extra-thick noodles with their uniquely soft texture have been called a 'treasure of Tajimi'. Selected as one of Japan's Top 100 Udon Restaurants (East) 2024.
