Founded in 1991 and now in the hands of a second-generation owner, this is one of Hakata's very few authentic Shinshu-style soba shops, earning a Tabelog score of 3.68 and a taste rating of 4.7 on Jalan, and a feature on RKB broadcaster's popular food programme.
Every batch is ground in-house on a stone mill, and the fragrant mori soba priced from around 900 yen draws a queue out the door at noon on Fridays.
