Koshin-do
Opened in 2011 by a veteran who worked at Ichiran for about 14 years. Authentic tonkotsu ramen using a massive 50kg soup kettle simmered for 12 hours. Three varieties: tonkotsu, tonkotsu shoyu, and shio tonkotsu. From ¥600 for lunch. A tiny 14-seat shop with a constant flow of local families and office workers.
Praised by locals as 'traditional and refined tonkotsu perfectly blended.' Always busy at lunch. '¥600 for this quality is unbelievable.' Featured on KBC Kyushu Asahi Broadcasting's 'Tonkotsu Warrior' special.
