Opened September 2025. A chef with 10+ years in Italian and French cuisine, supported fully by Hirohito Hoshi (representative of the acclaimed ramen shop Kirinjin), created this 'mountain stream-style ramen' using pure spring water from Nozawa Onsen and local sweetfish (ayu). Salt ramen 1,000 yen.
