Jikaseimen Noboru
A popular no-MSG ramen shop in Tamatsuki, Kanazawa, run by an owner trained in Kyoto. The clean, mellow broth blends chicken paitan with pork bone and seafood dashi, paired with house-made thin straight noodles. Founded around 2007 as 'Ramen Noboru,' it relocated to Tamatsuki and was renamed in 2013. Open for lunch only, but lines are constant.
While reviews note it's 'always packed, and lining up is a must,' one longtime regular left a harsh 'never going back' comment after a noodle-quality issue. Still, it's regarded as being on par with 'Fukuza,' another top no-MSG ramen shop in Kanazawa, and draws strong support from female diners.
