Torikawa Suikyo
Known as the originator of 'Hakata Torikawa' (Hakata-style chicken skin). The unique preparation takes 4-5 days of repeated grilling, resulting in an incomparable crispy-outside, fluffy-inside texture. Selected for Tabelog Yakitori 100 Best 2024. Single location only (Kiyokawa branch closed circa 2015). Reservations by phone only and always hard to get.
