Founded in 1986 after training at the celebrated Udondaira, Hagakure Udon has been a pillar of the Hakata backstreets for more than 37 years.
1986年に「うどん平」での修行を経て独立し、37年以上にわたって博多の街に根ざし続ける手打ちうどんの老舗。
Hand-stretched noodles made fresh each morning meet a deeply layered broth built from Rausu kelp, iriko sardines, and bonito flakes — all for around 600 to 800 yen per bowl, a price that belies the shop's Michelin Guide Fukuoka Bib Gourmand recognition and its repeated selection on Tabelog's Udon Top 100.
羅臼昆布・いりこ・かつおぶしで丁寧に引いた本格出汁と、毎日仕込む手打ち麺を合わせたごぼ天うどんは600〜800円台ながらミシュランガイド福岡ビブグルマンを獲得し、食べログうどん百名店にも複数年選出されている。
