Founded in 1938 (Showa 13), this is the birthplace of Takayama ramen—starting as a food stall and now in its 3rd generation. The pork-bone and umami-vegetable broth seasoned with bonito soy sauce and thin wavy noodles is Hida Takayama's iconic dish. Lines of 60+ people before opening are common.
