Himematsuya Honten
The originator of Guzouni, located directly across from Shimabara Castle. Legend holds that Amakusa Shiro cooked this stew with rice cakes and local mountain/sea ingredients during the 1637 Shimabara Rebellion. The first-generation proprietor elevated it into a restaurant dish in 1813. A simple pot of 10+ ingredients (mochi, shrimp, burdock, lotus root, tofu, egg, shiitake) simmered in dashi—the soul of Shimabara. 80% of customers order Guzouni.
