Tebiki Soba Isshin
A specialist hand-milled soba shop established in 1986. The craftsman hand-grinds domestic buckwheat using stone mills every day, adjusting the milling technique to the day's temperature and humidity. Rare heirloom varieties from Nagano and Shiga prefectures are always available, and guests can compare three types: juwari (100% buckwheat), niji-hachi (80% blend), and ganko. Michelin Bib Gourmand awarded; selected for Soba EAST Top 100 seven consecutive years (2017–2025).
