Nishiki Soba
Long-established soba shop 3 min walk from Hamada Station. Beloved by three generations of locals for over half a century. The fourth-generation owner hand-makes noodles every morning with fragrant seasonal buckwheat flour. The broth, drawn from Rishiri kombu and fish flakes, is exquisite.
